Fudgy, crunchy ginger slice - pure magic!
Ingredients:
  • 250g packet Nice biscuits
  • 2.50 gm ground ginger
  • 250g packet gingernut biscuits
  • 180g butter, melted
  • 395g can sweetened condensed milk
  • 250.00 ml vanilla marshmallows, halved
  • 200g dark chocolate, chopped
  • 200g milk chocolate, chopped
Instructions:
  • Grease a 18cm x 28cm slice pan and line the base and sides with baking paper, allowing it to extend 2cm above the edges.
  • Add Nice biscuits, ginger, and half of the gingernut biscuits into a food processor and blend until finely chopped. Mix in the butter until fully combined. Press the mixture onto the base of the pan and chill in the refrigerator while making the topping.
  • Coarsely chop the remaining biscuits.
  • In a medium saucepan over medium heat, melt condensed milk, marshmallows, and chocolates together, stirring constantly until smooth (about 10 minutes). Quickly pour the mixture over the biscuit base, level the top, and sprinkle with chopped biscuits, gently pressing them into the chocolate mixture. Chill in the refrigerator for at least 6 hours or overnight.
  • Allow the sliced dish to rest at room temperature for 10 minutes before cutting into pieces and serving.
