Crispy, fried funnel cakes like those from county fairs, generously dusted with powdered sugar.
Ingredients:
  • 1 quart vegetable oil for frying, or as needed
  • 1.5 cups milk
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup confectioners' sugar
Instructions:
  • Preheat a heavy skillet with oil to 375 degrees F (190 degrees C).
  • In a large bowl, whisk together the milk and eggs until blended. In a separate bowl, mix the flour, baking powder, cinnamon, and salt. Gradually stir the dry ingredients into the egg mixture until the batter is smooth.
  • Cover the funnel hole with your finger, then pour in 1 cup of batter. Swirl the funnel starting from the center of the skillet to create a 6- or 7-inch round. Fry in hot oil until the bottom is golden brown. Flip and cook the other side until golden brown, approximately 1 minute each side. Drain on paper towels and repeat with the remaining batter.
  • Dust with powdered sugar and enjoy while still warm.
