Rochester's famous Garbage Plate sauce: a savory, seasoned meat sauce for topping macaroni salad or home fries.
Ingredients:
  • 1.25 cups water, plus more as needed
  • 1 tablespoon white vinegar
  • 0.5 teaspoon paprika
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon ground thyme
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Brown and crumble ground beef in a large skillet over medium-high heat for 5 to 7 minutes. Remove and discard grease.
  • Blend the cooked beef until finely minced in a blender.
  • Combine minced, cooked beef back into the skillet along with 1 1/4 cups water, vinegar, paprika, black pepper, chili powder, cayenne pepper, salt, allspice, cloves, cumin, thyme, and cinnamon. Simmer over medium heat, ensuring a moist, gravy-like consistency by adding water as needed for at least 30 minutes.
