Transform fridge leftovers into a delicious and vibrant "Eco-Friendly Veggie Soup" that turns potential waste into a delightful meal for the whole family.
Ingredients:
  • 1 pound lean ground beef
  • 6 potatoes, diced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 onion, chopped
  • 1 cup chopped celery
  • 1 (10.5 ounce) can beef broth
  • 2 cups mixed vegetables
  • salt and pepper to taste
  • 0.125 tablespoon dried rosemary
  • 0.125 tablespoon dried thyme
  • 0.25 tablespoon dried basil
  • 0.5 pound bacon - cooked and crumbled
Instructions:
  • Place beef, potatoes, tomatoes, onion, celery, broth, and vegetables in a large stock pot. Add water to cover ingredients. Cook covered over medium heat for 1 hour or until vegetables are tender and beef is done.
  • Season generously with salt, pepper, rosemary, thyme, and basil to enhance flavors. Sprinkle in bacon bits, mix well, and present beautifully.
