Summer salad with new potatoes and crisp green beans.
Ingredients:
  • 1 pound new red potatoes, scrubbed and halved
  • 1 pound new white potatoes, scrubbed and halved
  • 0.5 pound fresh green beans, trimmed and snapped
  • 0.5 pound fresh wax beans, trimmed and snapped
  • 0.5 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 stalks celery, chopped
  • 0.33333334326744 cup chopped fresh dill
  • salt and pepper to taste
Instructions:
  • Place potatoes in a large pot, cover with water, and bring to a boil. Cook until tender, approximately 10 minutes. Add green beans and wax beans for the last 2 minutes to blanch. Drain, rinse in cold water to stop cooking, and cool before combining with the dressing.
  • Combine mayonnaise, mustard, celery, dill, salt, and pepper in a large bowl. Gently fold in the cooled potatoes and beans until coated. Chill before serving.
