Indulgent lobster lasagna perfect for a gourmet date night. Pair with a fresh garden salad and crispy garlic bread.
Ingredients:
  • 2 large eggs
  • 1 medium onion, minced
  • 1 (15 ounce) container ricotta cheese
  • 2 cups shredded Cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon freshly ground black pepper
  • 2 (16 ounce) jars Alfredo pasta sauce
  • 16 no-boil lasagna noodles
  • 2 pounds cooked and cubed lobster meat
  • 1 (10 ounce) package baby spinach leaves
Instructions:
  • - Preheat your oven to a toasty 375 degrees F (190 degrees C) and prep a 9x13-inch baking dish by giving it a light grease coating.
  • In a big bowl, combine ricotta cheese, 1 cup of Cheddar, 1/2 cup of mozzarella, 1/2 cup of Parmesan, and eggs. Add in onion, parsley, garlic, and pepper, and stir well.
  • Cover the bottom of the baking dish with 1 1/2 cups of Alfredo sauce. Lay down 4 lasagna noodles as the first layer. Spread 1/3 of the lobster meat over the noodles, followed by 1/3 of the spinach and another layer of Alfredo sauce. Repeat these layers two more times: noodles, lobster, spinach, and sauce. Sprinkle the remaining Cheddar, mozzarella, and Parmesan on top. Give the pan a gentle shake to settle everything in place.
  • Loosely cover the baking dish with foil and bake for 45 minutes in the preheated oven. Uncover and bake for an additional 10 minutes until the cheese is nicely browned.
  • Allow the dish to rest for 10 minutes prior to serving.
