Ingredients:
  • 1.5 tablespoons olive oil, divided
  • 2 (6 ounce) skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 3 tablespoons minced garlic
  • 8 sprigs fresh cilantro
  • 8 leaves fresh basil
  • 1 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • 1 teaspoon ground black pepper
  • 1 teaspoon crushed red pepper
  • 1 (16 ounce) package gemelli pasta
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a large, deep skillet, heat 1 tablespoon of oil until shimmering. Cook the chicken until it is no longer pink in the center and the juices run clear, about 7 to 8 minutes per side. Use an instant-read thermometer to ensure the internal temperature reaches at least 165 degrees F (74 degrees C). Then, remove the chicken from the skillet and cut it into small chunks.
  • Combine the remaining oil, butter, and garlic in the skillet over low heat. Toss in the cilantro and basil, stirring continuously. Gently incorporate the cooked chicken, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper. Cook for approximately 20 minutes, stirring regularly to prevent the cheese from sticking to the pan.
  • While you wait, bring a large pot of lightly salted water to a boil. Add gemelli and cook, stirring occasionally, until al dente, about 12 minutes.
  • After cooking the pasta, drain it and then place it back into the pot. Add the sauce and mix well to ensure the pasta is evenly coated.
