Savory potato bake with garlic, thyme, and onion butter, topped with crispy parmesan crust.
Ingredients:
  • 1.5kg desiree potatoes, peeled, cut into 3mm slices
  • 2 brown onions, thinly sliced
  • 6 garlic cloves, thinly sliced
  • 1 ½ tbsp fresh thyme leaves
  • 435ml (1 ¾ cups) vegetable style liquid stock
  • 50g butter, chopped
  • 40g (½ cup) finely grated parmesan
Instructions:
  • Preheat the oven to 200C/180C fan forced, then generously grease a 20 x 30cm baking dish that is 5cm deep.
  • Layer one-quarter of the potato slices on the bottom of the baking dish. Sprinkle one-third of the onion, garlic, and thyme. Season with salt and pepper. Repeat with three more layers of potatoes, onion, thyme, and seasoning. Finish with a final layer of slightly overlapping potatoes on top.
  • In a small saucepan, simmer stock and butter until they come to a boil. Pour this mixture over the potatoes, cover with foil, and bake for 30 minutes. Remove the foil, sprinkle with Parmesan, and bake for another 40 minutes until the top is golden brown and the potatoes are cooked through. Let it rest for 10 minutes before serving.
