Transform garlic into a versatile spread for bread, pasta, or soup.
Ingredients:
  • 3 heads of garlic
  • 1 cup of olive oil, or more if needed
Instructions:
  • Peel the garlic: Smash the head of garlic with your hand or a knife to separate the cloves. Place the cloves in a sealed container and shake vigorously for 30-second intervals until the skins come off easily. Hand-peel any remaining cloves if needed.
  • Trim the garlic by cutting off the ends with a sharp knife, then transfer the trimmed garlic to a 2-quart saucepan.
  • Prepare the garlic confit: In a saucepan, fully submerge garlic cloves in olive oil, adding more if needed. Heat the saucepan on medium-low until gentle bubbling occurs. Adjust heat to maintain this bubbling for 45 minutes until garlic is golden-brown and soft enough to mash easily with a fork.
  • Ensure the garlic confit develops a slightly sweet and caramelized flavor. Monitor the garlic every few minutes to adjust heat and keep gentle bubbles. Cooking time can vary up to 1 1/2 hours based on garlic size and pan temperature.
