Garlic Kale Quinoa

Wholesome quinoa kale sautéed with garlic and sesame oil. Perfect, simple side dish for any meal.
Ingredients:
  • 0.66666668653488 cup water
  • 0.33333334326744 cup quinoa
  • 1 tablespoon olive oil
  • 1 cup chopped kale
  • 0.25 teaspoon sesame oil
Instructions:
  • In a saucepan, bring 2/3 cup of water and quinoa to a boil. Cover, reduce heat to medium-low, and simmer for 15 to 20 minutes until quinoa is tender and water is absorbed.
  • In a skillet over medium heat, sauté kale and garlic in olive oil until kale is wilted, about 5 minutes. Season with salt and pepper.
  • Mix in the quinoa with the kale and drizzle in the sesame oil. Let it cook for about 5 minutes until the flavors meld together. Pour in 1 tablespoon of water to keep it from sticking.
