Low-carb garlic Parmesan cauliflower mash: guilt-free, creamy, and delicious.
Ingredients:
  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 clove garlic, smashed
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon reduced-fat cream cheese
  • 0.5 teaspoon kosher salt
  • 0.125 teaspoon freshly ground black pepper
Instructions:
  • Set up a steamer in a saucepan filled with water just below the steamer. Once the water is boiling, add cauliflower, cover, and steam until tender, approximately 10 minutes.
  • In a small skillet over medium heat, sauté garlic in olive oil until softened, approximately 2 minutes. Remove from heat.
  • Add half of the cauliflower to a food processor and blend on high. Gradually incorporate the rest of the cauliflower florets until you achieve a creamy texture. Mix in the cooked garlic, Parmesan cheese, cream cheese, salt, and black pepper.
