Garlic Mashed Cauliflower

Try this creamy garlic mashed cauliflower as a delicious and healthier alternative to mashed potatoes for a sneaky veggie-packed side dish.
Ingredients:
  • 2 Tablespoons unsalted butter
  • 1 Tablespoon minced garlic, or to taste
  • 2 pounds frozen riced cauliflower, thawed
  • 1 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of nutmeg, or to taste
  • 1/2 cup chicken broth
  • 1 Tablespoon snipped chives for optional garnish
Instructions:
  • In a large skillet over medium heat, melt butter. Add minced garlic and sauté until fragrant, about 30 seconds.
  • Combine the thawed, riced cauliflower with salt, pepper, and nutmeg. Pour in the chicken broth and bring to a boil while stirring regularly to blend the flavors.
  • Cover and cook for 8 minutes, then uncover and stir until most of the liquid evaporates, around 5 to 8 minutes.
  • Purée cauliflower until smooth using an immersion blender. Alternatively, transfer cauliflower to a blender and purée until smooth. Serve in a bowl and top with snipped chives for garnish.
