Garlic mashed potato and gravy

Enhance your meat pie with savory garlic mashed potatoes and rich gravy.
Ingredients:
  • 1kg cream delight potatoes, peeled, chopped
  • 3 garlic cloves, peeled
  • 117.50 gm light sour cream
  • 50g butter
  • 1 brown onion, halved, thinly sliced
  • 2 sprigs fresh thyme
  • 40.00 ml plain flour
  • 62.50 gm white wine (see note)
  • 446.25 gm beef stock
Instructions:
  • In a large saucepan, combine potato and garlic, covering them with cold water. Boil over high heat until tender, about 15 minutes. Drain and return to the pan over low heat, tossing for 1 minute to remove excess liquid. Remove from heat and roughly mash using a potato masher. Stir in sour cream and half of the butter until smooth. Season with salt and white pepper, then cover to keep warm.
  • In a saucepan over medium heat, warm the oil and remaining butter. Add the onion and cook, stirring occasionally, until golden and tender, about 20 minutes.
  • Sprinkle in fresh thyme and cook until fragrant. Stir in flour and cook for 4 to 5 minutes until golden and bubbling. Gradually pour in wine and stock, stirring until mixture is smooth. Bring to a boil, then lower heat and simmer for 10 minutes until thickened. If preferred, strain gravy through a fine sieve. Season with salt and pepper, then drizzle over mashed potatoes before serving.
