Upgrade classic mashed potatoes with a flavorful casserole of garlic, green onions, eggs, and Cheddar cheese. Perfect for any meal!
Ingredients:
  • 3 pounds Yukon Gold potatoes, or more as needed
  • 0.5 cup hot milk
  • 0.5 cup cream cheese, softened
  • 0.5 cup chopped green onions, divided
  • 1 egg, lightly beaten
  • 3 tablespoons butter
  • 3 cloves garlic, crushed and chopped, or to taste
  • 0.5 teaspoon salt
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, approximately 20 minutes. Drain and return to the pot.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a glass baking dish.
  • In a bowl, blend milk, cream cheese, 1/3 cup green onions, egg, butter, garlic, and salt. Spread over the potatoes and mash until smooth. Transfer to the baking dish and top with Cheddar cheese and remaining green onions.
  • Bake until golden brown, approximately 40 minutes in the preheated oven.
