Enhance your dishes with rich and flavorful Swiss brown mushrooms - perfect for risotto, pasta, or as a delicious topping for cheesy garlic toasts.
Ingredients:
  • 400g fresh ricotta
  • 40.00 ml chopped fresh dill
  • 20.00 ml finely grated lemon rind
  • 50g butter
  • 400g Swiss brown mushrooms, halved
  • 1 large garlic clove, crushed
  • 8 slices artisan cheese bread, toasted
  • Fresh dill sprigs, to serve
Instructions:
  • Mix together the ricotta, dill, and lemon zest in a bowl. Season with salt and pepper to taste.
  • In a large frying pan over medium-high heat, melt the butter until foamy. Sauté the mushrooms, stirring frequently, for 5 minutes until golden. Stir in the garlic and cook for 30 seconds until fragrant.
  • Evenly coat the toast with the creamy ricotta mixture, then add the savory mushroom mixture and garnish with fresh dill sprigs.
