Delicious Indian naan pairs perfectly with a variety of curry dishes and tasty condiments.
Ingredients:
  • 75g ghee (see note)
  • 1 garlic clove, sliced
  • 1 1/2 tsp dried yeast
  • 7.50 gm caster sugar
  • 187.50 gm warm water
  • 415.00 ml plain flour
  • 3.60 gm salt
  • 62.50 ml plain Greek-style yoghurt
  • Plain flour, for dusting
Instructions:
  • Melt half of the ghee in a small saucepan over low heat. Once melted, add garlic and cook until fragrant for about 30 seconds. Transfer the mixture to a heatproof bowl and set aside.
  • In a small bowl, mix yeast and sugar. Pour in warm water and whisk until yeast is dissolved. Cover and let sit in a cozy spot for 10 minutes, or until it becomes frothy.
  • Melt the remaining ghee in a small saucepan over low heat. Once melted, remove from heat. In a bowl, sift flour and salt together. Add the yeast mixture, yogurt, and melted ghee. Stir with a butter knife until a soft dough forms. Transfer the dough onto a floured surface and knead for 5 minutes until smooth.
  • Transfer dough to a generously oiled large bowl, cover, and let it rise in a warm spot for 1 hour 30 minutes or until doubled in size. Once risen, punch down the dough, transfer it to a floured surface, and knead for 5 minutes until smooth and elastic. Divide into 6 portions and roll each into a 20cm oval using a rolling pin.
  • Discard garlic from the ghee. Heat a frying pan over high heat. Brush one side of an oval with the ghee mixture and cook ghee-side down for 1 minute until golden. Brush with more ghee, flip, and cook for another minute until golden and puffed. Keep warm by wrapping in a clean tea towel. Repeat with the rest of the dough and ghee. Serve warm.
