Make Chef John's Garlic Naan: a flavorful bread with yogurt dough, cooked in a sizzling skillet for a perfect char.
Ingredients:
  • 0.5 cup warm water, or more as needed
  • 1 teaspoon white sugar
  • 1 (.25 ounce) package active dry yeast
  • 2 cloves garlic, minced
  • 2 cups bread flour, or more as needed
  • 0.25 cup plain yogurt
  • 1 teaspoon kosher salt
  • 0.25 cup chopped cilantro
Instructions:
  • In a bowl, mix together water, sugar, and yeast. Allow the mixture to rest until the yeast softens and creates a creamy foam, approximately 15 minutes.
  • Melt butter in a pan over medium heat until sizzling, then swiftly stir in garlic and remove from the heat.
  • Combine bread flour, yogurt, salt, and 1 tablespoon of garlic butter with the yeast mixture; use a wooden spoon to mix until a shaggy dough forms. Knead by hand until the dough cleanly pulls away from the bowl, adjusting with water or flour if necessary. Transfer dough onto the counter and knead until a smooth ball forms, about 3 to 4 minutes.
  • Transfer the dough into a spacious bowl and generously drizzle a few spoons of garlic butter on top. Cover the bowl and allow the dough to rise until it doubles in volume, approximately 2 hours.
  • Gently deflate dough and transfer onto the counter. Shape into a rectangle and divide into 6 pieces. Roll each piece into a ball and sprinkle with flour. Cover with plastic wrap and let proof until slightly puffy, about 15 to 20 minutes.
  • Heat up a cast iron skillet over medium heat until it becomes very hot, which should take about 5 to 10 minutes.
  • Roll out the proofed dough into 1/8-inch-thick ovals. Sprinkle a touch of cilantro on top and gently press to stick.
  • Cook the naan in the hot skillet in batches until large bubbles form, about 1 to 2 minutes. Flip, press gently, and cook until the bottom bubbles are charred, about 2 to 3 minutes more.
  • Enhance flavor by generously applying additional garlic butter to the naan before serving.
