Garlic prawn, lemon and feta spaghetti

Whip up a gourmet seafood pasta in no time!
Ingredients:
  • 400g spaghetti
  • 56.88 gm olive oil
  • 1 red onion, finely chopped
  • 500g prawn
  • 3 garlic cloves, finely chopped
  • 125.00 gm dry white wine
  • 1 tsp finely-grated lemon rind
  • 42.00 gm lemon juice
  • 250.00 ml roughly-chopped fresh flat-leaf parsley leaves
  • 125g low-fat feta, crumbled
  • crusty bread, to serve
Instructions:
  • Prepare pasta in a generous saucepan of boiling water according to package instructions until al dente.
  • Over medium-high heat, warm 1 tablespoon of oil in a large non-stick frying pan. Sauté onion until tender, about 3 minutes. Add prawns and garlic, cook until prawns are just pink, about 2 minutes. Pour in wine, bringing it to a boil, then reduce heat and simmer uncovered for 1 minute until prawns are cooked through. Take off heat and stir in lemon rind and juice.
  • After draining the pasta, place it back in the pan on low heat. Mix in the prawn mixture, remaining oil, parsley, and feta. Season with pepper and toss everything together. Serve with crusty bread.
