Ingredients:
  • 4 cups chicken broth
  • 3 tablespoons grated fresh ginger root
  • 2 cloves garlic, minced
  • 1 cup chopped zucchini
  • 2 cups cubed cooked chicken
  • 1 (2 ounce) package cellophane noodles
  • 4 cups fresh spinach
Instructions:
  • In a large saucepan, create a flavorful base by bringing together chicken broth, ginger, and garlic. Simmer gently over medium heat for 10 minutes. Introduce zucchini and continue cooking until perfectly tender, approximately 10 more minutes.
  • Incorporate cooked chicken and cellophane noodles, cooking until chicken is heated through and noodles are soft and translucent, approximately 3 minutes. Introduce spinach and stir until wilted.
