Rosemary and garlic seasoned chicken and potatoes cooked together in the slow cooker for a deliciously flavorful meal.
Ingredients:
  • 1.5 pounds potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 1 (4 to 6 pound) whole roasting chicken
  • 6 cloves garlic, halved lengthwise
  • 2 tablespoons rosemary
  • freshly cracked salt and pepper to taste
Instructions:
  • Layer the potatoes at the base of the slow cooker and top with the onions.
  • Remove and discard the chicken parts from the cavity and pat the chicken dry. Make deep slits all around the chicken, inserting a sliver of garlic into each slit. Place any remaining garlic pieces into the cavity.
  • Begin by generously seasoning the back of the chicken with half of the rosemary, cracked salt, and pepper. Ensure to season inside the chicken's cavity. Next, flip the chicken and position it breast side up in the slow cooker over the potatoes and onions. Finally, season the top of the chicken generously with the remaining rosemary, cracked salt, and pepper.
  • Slow cook until the chicken is fully cooked and the juices run clear when cut, around 8 to 10 hours. Serve with the potatoes and onions from the pot.
