Try making these festive gelatin candies for a new holiday tradition.
Ingredients:
  • 3 cups white sugar
  • 0.75 cup light corn syrup
  • 0.75 cup water
  • 2 egg whites
  • 1 (3 ounce) package cherry flavored Jell-O® mix
  • 1 cup chopped pecans
Instructions:
  • Prepare a 9x13 inch glass baking dish by greasing it with butter, then set it aside. In a saucepan over medium-high heat, mix together the sugar, corn syrup, and water. Stir to combine, and bring the mixture to a boil. Cook until the temperature on a candy thermometer reaches 250 to 265 degrees F (121 to 129 degrees C) or until a small amount of syrup dropped into cold water forms a rigid ball.
  • Using an electric mixer, whip egg whites until foamy, then sprinkle in gelatin powder. Continue whipping until stiff peaks form when the beaters are lifted.
  • Once the hot syrup is ready, slowly pour it into the egg white mixture while mixing on low speed. Increase to high speed and whip until the candy becomes stiff and loses its shine. Gently mix in the nuts, then spread the mixture into the prepared pan. Let it cool until set before cutting it into squares.
