Authentic Georgian recipe: Redeye gravy made with butter, ham drippings, and breakfast coffee, perfect with country ham.
Ingredients:
  • 2 tablespoons butter
  • 1 slice salt-cured ham
  • 0.25 cup strong black coffee
Instructions:
  • In a cast iron skillet over medium heat, melt butter. Add ham and cook until both sides are nicely browned, around 3 minutes per side. Remove ham from skillet, keeping the flavorful fat. Then pour coffee into the skillet, using a wooden spoon to scrape up the tasty bits. Bring to a boil and serve the delicious gravy over the ham.
