Delicious pecan-studded brown sugar candy, perfect for sharing during Christmas festivities.
Ingredients:
  • 3 cups light brown sugar
  • 1 cup evaporated milk
  • 0.5 teaspoon vanilla extract
  • 2 cups chopped pecans
  • 1 tablespoon butter
Instructions:
  • In a medium saucepan, mix the brown sugar and evaporated milk. Heat over medium-high heat, stirring until the sugar dissolves. Once the mixture starts boiling, attach a candy thermometer to the pan.
  • Heat the syrup to 232 degrees F (112 degrees C) or until it forms a soft ball when dropped into cold water, flattening when placed on a flat surface.
  • Take the mixture off the heat and blend in the vanilla using a sturdy wooden spoon. Mix in the butter and pecans until the mixture thickens and becomes creamy. Once it loses its shine, spoon dollops onto waxed paper and let cool at room temperature until firm. Store in an airtight container at room temperature.
