Try Georgia Pot Roast, a tasty twist on Mississippi Pot Roast with pickled Vidalia onions. Serve over your favorite starch for a delicious meal.
Ingredients:
  • 1.5 to 3 pounds beef chuck roast
  • 1 packet au jus gravy
  • 1 packet ranch seasoning
  • 1 (16 ounce) jar pickled onions, such as Mt. Olive Simply Vidalia Pickled Vidalia® Onion Strips
  • 4 cups low sodium beef stock, or as needed
  • 1 tablespoon butter, at room temperature
  • 1 tablespoon all-purpose flour
Instructions:
  • Place the chuck roast in a slow cooker without searing. Sprinkle the roast with the au jus packet and ranch seasoning packet, then pour the pickled onions over the roast.
  • Cover the slow cooker and let it work its magic on High for 4 to 6 hours, or on Low for an even richer flavor for 6 to 8 hours.
  • Add beef stock as necessary if more liquid is needed during cooking.
  • Take out the roast when it is incredibly tender and easily falls apart, shred it, then put the shredded beef back into the liquid.
  • Combine softened butter and flour in a bowl to form a paste, then blend it into the beef and liquid for a velvety gravy. Simmer uncovered for 30 minutes.
