German Potato and Sausage Casserole

Create a comforting German-inspired dinner by baking kielbasa and sauerkraut with potato soup.
Ingredients:
  • 1 bag (28 oz) frozen potatoes O'Brien with onions and peppers, thawed
  • 1 can (14 oz) sauerkraut, drained, rinsed
  • 1 can (10 3/4 oz) condensed cream of potato soup
  • 1 1/3 cups half-and-half
  • Paprika
  • 1 lb cooked kielbasa or Polish sausage, cut into 6 pieces
Instructions:
  • Preheat the oven to 375°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray. Combine potatoes and sauerkraut in the baking dish.
  • Combine the soup and half-and-half in a medium bowl. Blend the soup mixture into the potatoes until well combined. Finish with a sprinkle of paprika.
  • Bake for 20 minutes. Place sausage pieces on top of potato mixture, gently pressing them in. Continue baking for an additional 25-30 minutes.
