Upgrade German potato salad with a shortcut twist: crispy potato nuggets tossed in warm bacon dressing.
Ingredients:
  • canola oil cooking spray
  • 1 (28 ounce) package frozen bite-sized potato nuggets (such as Tater Tots®)
  • 1 (8 ounce) package bacon, cut into 1/2-inch pieces
  • 1 cup diced yellow onion
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt, or more to taste
  • 0.33333334326744 cup apple cider vinegar
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
Instructions:
  • Preheat the oven to 425°F (220°C) while you line a baking sheet with foil and give it a generous spray of cooking oil.
  • Arrange the frozen potato nuggets evenly on the pan and generously coat the tops with cooking spray.
  • Bake in the center of the preheated oven for 40-45 minutes until golden brown and crispy, slightly longer than the package suggests.
  • Prepare the dressing by adding bacon to a cold, dry pan. Cook over medium-high heat until bacon is almost crisp and fat has rendered. Reduce heat to medium, then add diced onion. Cook and stir occasionally until onion softens and becomes translucent, about 3 minutes.
  • Add sugar, pepper, and 1 teaspoon of salt to the pan and cook until the sugar just starts to caramelize, approximately 1 minute. Deglaze the pan by stirring in apple cider vinegar and scraping the bottom to release any brown bits. Turn off the heat.
  • Take the Tater Tots out of the oven and allow them to cool for 5 minutes. Transfer them to a large mixing bowl. Drizzle warm bacon dressing over the top and mix until well coated. Add parsley and chives. Season with salt to taste before serving.
