Elevate your Christmas spread with a classic German-style potato salad.
Ingredients:
  • 1kg Red Royale, Carisma Potatoes or Washed Potatoes, coarsely chopped
  • 4 bacon rashers, chopped
  • 4 Free Range Eggs
  • 2 celery sticks, thinly sliced
  • 2 spring onions, thinly sliced
  • 2 dill cucumbers, coarsely chopped
  • 20.00 ml capers
  • 62.50 ml coarsely chopped dill
  • 40.00 ml finely chopped chives
  • 150g mayonnaise
  • 60g sour cream
  • 2 anchovy fillets, finely chopped
  • 1 tsp horseradish cream
  • 5.90 gm Dijon mustard
  • 20.00 ml white wine vinegar
Instructions:
  • Simmer the potato in a generously sized saucepan of boiling water for 15 minutes, or until it is easily pierced with a fork. Drain thoroughly.
  • Cook the bacon in a non-stick frying pan over medium heat, stirring occasionally, until crisp, about 5 minutes. Place on a paper towel-lined plate.
  • Boil the eggs in a saucepan of bubbling water for 7 minutes for a soft-boiled consistency or until desired doneness. Quickly cool them in cold water.
  • Combine the potato, bacon, celery, spring onion, dill cucumber, capers, chopped dill, and chives in a bowl, stirring well.
  • Combine mayonnaise, sour cream, anchovy, garlic, horseradish, mustard, and vinegar in a small bowl. Whisk until creamy and well mixed. Season to taste.
  • Pour the luscious horseradish mayo over the potatoes and mix gently to blend.
  • Peel the eggs, slice them thickly, and arrange them with the potato mixture on a serving platter.
