Creamy German-style potato salad

Indulge in traditional German potato salad with a choice of homemade or store-bought mayo.
Ingredients:
  • 82.50 ml cider vinegar
  • 1 small red onion, halved, thinly sliced
  • 4 sweet and sour cucumbers, thinly sliced
  • 1.2kg desiree potatoes (unpeeled)
  • 2 middle bacon rashers, trimmed, finely chopped
  • 123.75 gm mayonnaise
  • 58.75 gm sour cream
  • 62.50 ml fresh flat-leaf parsley leaves, roughly chopped
  • 40.00 ml fresh dill, roughly chopped
Instructions:
  • In a spacious heatproof bowl, combine vinegar, onion, and cucumber. Boil potatoes in a large saucepan of salted water for 15 to 20 minutes until tender. Drain and once they have cooled, peel and slice them. Add the sliced potatoes to the bowl and gently mix everything together. Let it sit for 1 hour, stirring now and then.
  • Heat oil in a frying pan over medium-high heat. Cook bacon until golden and crispy, about 4 to 5 minutes. Drain on paper towel.
  • Mix together mayonnaise, sour cream, 1 tablespoon water, and seasonings in a small bowl. Add this mixture along with 3/4 of the bacon, parsley, and dill to the potatoes. Gently combine everything together and chill in the refrigerator for 30 minutes.
  • Garnish with the remaining crispy bacon, fresh parsley, and fragrant dill. Enjoy your dish!
