Indulge in these soft and chewy ginger cookies bursting with warm spices like ginger, cinnamon, and cloves, sweetened with rich molasses.
Ingredients:
  • For the dough:
  • 4 1/2 cups all-purpose flour
  • 4 teaspoons ground ginger
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1- 1/2 cups butter (3 sticks), room temperature
  • 2 cups sugar
  • 1/2 cup molasses (unsulfured)
  • For rolling the cookies:
  • 3/4 cup coarse sugar or granulated sugar (for rolling)
Instructions:
  • In a medium bowl, whisk together flour, ground ginger, baking soda, cinnamon, cloves, and salt until evenly combined.
  • Prepare the dough: In a large mixing bowl, cream the softened butter with the sugar until well combined. Add the eggs one at a time, followed by the molasses. Using a wooden spoon, gradually mix in the flour mixture until fully incorporated.
  • Preheat the oven to 350°F.
  • Place 2-inch dough balls on the cookie sheet: Shape 1/4 cup of dough into balls and roll them in sugar. Arrange the dough balls 2 1/2 inches apart on an ungreased cookie sheet.
  • Bake the cookies in a preheated 350°F oven for 12 to 14 minutes until they are light brown and puffy. Allow them to cool on the cookie sheet for 2 minutes before transferring them to a wire rack to cool completely. Enjoy fresh for up to three days at room temperature or freeze for up to three months in a sealed container.
