Giant individual sausage rolls for dinner

Kid-friendly giant pork and chorizo sausage rolls for a fun family dinner.
Ingredients:
  • 3 fresh chorizo sausages
  • 350g pork mince
  • 1 red onion, very finely chopped
  • 1 green apple, peeled, cored, coarsely grated
  • 50g (1/2 cup) rolled oats
  • 62.50 ml coarsely chopped fresh continental parsley
  • 20.00 ml finely chopped fresh sage
  • 1 tsp fennel seeds
  • 2 sheets frozen butter puff pastry, just thawed
  • 1 egg, lightly whisked
  • 12.00 gm black or white sesame seeds or a mixture of both (you can also use nigella seeds)
  • Ketchup, to serve
  • Crispy potatoes, to serve
  • Salad, to serve
Instructions:
  • Remove the chorizo sausage meat from casings and transfer it to a bowl. Mix in the pork mince, onion, apple, oats, parsley, sage, and fennel seeds. Season generously and blend everything together using your hands.
  • Preheat the oven to 200C/180C fan forced and line a baking tray with baking paper.
  • Divide the pork mixture into 2 portions and shape each into a log in the center of each pastry sheet. Gently wrap the pastry around the filling, sealing the edges with care.
  • Lay the roll on the tray seam side down. Freeze for 10 minutes to firm up. (A quick freeze helps handle the butter puff pastry easily, ensuring a smoother cooking experience - who doesn't enjoy some cooking convenience?)
  • Coat each sausage roll with egg wash and sprinkle sesame seeds on top. Bake for 45 minutes until the pastry is puffed and golden. If you're in a hurry, they can be ready in 30 minutes, but for a perfectly crisp pastry, bake for the full 45 minutes.
  • Garnish with a side of tangy ketchup, crispy potatoes, and fresh salad.
