Festive Christmas cocktail with gin, Prosecco, cranberry juice, and a sherbet fizz surprise. Guaranteed to impress your guests!
Ingredients:
  • 85g pkt lime jelly crystals
  • Red or green liquid food colouring, to tint
  • 12.00 gm icing sugar
  • 1 tsp citric acid
  • 2.50 gm bicarbonate of soda
  • 1 egg white
  • 125ml (1/2 cup) gin
  • 250ml (1 cup) cranberry juice
  • 21.00 gm fresh lime juice
  • 5.00 gm caster sugar
  • 500ml (2 cups) Prosecco
  • 4 fresh lime wedges
  • 4 fresh mint sprigs
  • 8 maraschino cherries
Instructions:
  • Combine jelly crystals and a few drops of food color in a sealable plastic bag, gently rubbing between your fingers to distribute the color. Add icing sugar, citric acid, and bicarbonate soda to the bag, then shake well to mix.
  • Whisk the egg white gently in a shallow bowl. Spread the sugar mixture on a plate. Dip the glass rim into the egg white, then in the sugar to coat. Repeat for all glasses. Let them sit as you prepare the cocktail.
  • Mix together the gin, cranberry juice, lime juice, and caster sugar in a jug until the sugar dissolves.
  • Pour the cocktail mixture into the glasses, then top each with cold Prosecco.
  • Garnish each glass with a wedge of lime, a sprig of fresh mint, and a cherry. Serve promptly.
