Quick and budget-friendly low-fat meal ready in 25 minutes.
Ingredients:
  • 2cm piece ginger, peeled, grated
  • 1 tsp sesame oil
  • 500g chicken thigh fillets, trimmed
  • 1 brown onion, finely chopped
  • 300.00 gm jasmine rice, rinsed
  • 573.75 gm salt reduced chicken style liquid stock
  • olive oil cooking spray
  • 82.50 ml coriander leaves
  • 40.00 ml slivered almonds, toasted
  • 1 bunch Asian greens, steamed (see note), to serve
Instructions:
  • In a beautiful ceramic bowl, mix together ginger, aromatic sesame oil, and 2 tablespoons of zesty lime juice. Add the chicken and coat it well with the flavorful mixture. For optimal taste, cover and chill in the fridge for 1 hour, if possible.
  • In a saucepan over medium heat, sauté the onion in 1 tablespoon of cold water until tender. Stir in the rice to coat, then bring to a boil after adding stock. Simmer covered for 15 minutes until the stock is absorbed. Let it stand for 5 minutes before serving.
  • Preheat a barbecue grill or chargrill pan over medium-high heat. Spray both sides of the chicken with oil and grill for 3 minutes on each side, or until fully cooked.
  • Fluff rice with a fork to separate grains, then mix in coriander and season with salt and pepper. Plate the pilaf, top with thickly sliced chicken, sprinkle with almonds, and serve alongside Asian greens.
