Ginger and makrut lime granita recipe

Impress guests with a zesty mint, citrus, and ginger granita, infused with fragrant lime leaves.
Ingredients:
  • 450ml water
  • 215g (1 cup) caster sugar
  • 6 fresh makrut lime leaves
  • 4 fresh mint leaves
  • 1.5cm-piece fresh ginger, peeled, finely grated
  • 300ml fresh lemon juice
  • 1 fresh makrut lime leaf, extra, very thinly sliced
Instructions:
  • In a saucepan, mix water, sugar, lime leaves, mint, and ginger over medium-high heat. Cook and stir for 5 minutes until the sugar dissolves. Bring to a boil, then simmer without stirring for 2 minutes until the syrup thickens. Cover and let it cool for 1 hour.
  • Combine the lemon juice with the syrup, stirring well. Remove and discard the lime leaves and mint. Pour the mixture into a square 22cm cake pan. Cover with foil and freeze for 2 hours, or until edges are frozen.
  • Take a robust fork and gently smash the frozen mixture. Cover and freeze for 1 hour. Repeat this process twice more.
  • Scrape mixture with a sturdy fork to create coarse crystals. Divide evenly into small serving glasses. Sprinkle with extra lime leaf and serve immediately.
