Ingredients:
  • 4 chicken breast fillets, trimmed
  • 75.00 gm sesame, ginger & soy marinade & sauce
  • 125.00 ml flaked almonds
  • 200.00 gm white long-grain rice, rinsed
  • 20.00 gm butter, chopped
  • 2 zucchini, trimmed, grated
  • 1 stalk celery, trimmed, thinly sliced
Instructions:
  • Spread the chicken evenly in a ceramic dish. Drizzle the marinade over the chicken and ensure it is well coated. Refrigerate for 20 minutes, if possible.
  • Preheat the oven to 200°C. Spread almonds on a baking tray and toast for 5 to 7 minutes until golden. Transfer almonds to a plate. Line the baking tray with parchment paper. Place the marinated chicken on the tray and bake for 18 to 20 minutes until cooked through. Let it rest for 5 minutes, then slice thickly before serving.
  • While the rice is cooking following the absorption method on the packet, add butter, zucchini, and celery. Season with salt and pepper, cover, and let sit for 5 minutes. Finally, mix in the almonds.
  • Serve chicken over a bed of delectably seasoned rice on plates. Enjoy the flavorful combination!
