A healthy and satisfying meal, great for any time of day and perfect for those looking to eat light!
Ingredients:
  • 350g lean beef sirloin steak, sliced on the diagonal
  • 1 tsp sesame oil
  • 6cm piece ginger, thinly sliced
  • olive oil cooking spray
  • 4 green onions, sliced on the diagonal
  • 200g snow peas, trimmed, sliced in half on the diagonal
  • 150g oyster mushrooms, chopped
  • 1 red capsicum, sliced
  • 120g baby corn, sliced in half on the diagonal
  • 42.00 gm reduced-salt soy sauce
  • cooked brown rice, to serve
Instructions:
  • Combine steak, fragrant sesame oil, and fresh ginger in an elegant ceramic dish. Chill in the refrigerator for 30 minutes to allow the flavors to meld perfectly, if possible.
  • Preheat a hot wok and spray it with oil. Stir-fry one-third of the beef until browned, about 1 minute. Transfer to a plate. Repeat the process twice with the rest of the beef, spraying the wok each time.
  • Lightly coat the wok with oil. Stir-fry vegetables for 3 minutes or until tender-crisp.
  • Add the beef back to the wok along with the soy sauce. Stir-fry for about a minute until everything is heated through. Serve the dish with some fluffy brown rice.
