Tender beef and veggies in a flavorful tomato, ginger, turmeric, and garlic sauce, served over fluffy rice.
Ingredients:
  • 2 onions, finely chopped
  • 3 cloves garlic, peeled and minced
  • 5 teaspoons grated fresh ginger root
  • 1 teaspoon ground turmeric
  • 0.25 teaspoon crushed dried chile pepper
  • 1.5 teaspoons salt
  • 1.25 pounds flank steak, cut into strips
  • 1 tablespoon peanut oil
  • 1 (14.5 ounce) can peeled and diced tomatoes, drained
  • 1 (10.5 ounce) can condensed onion soup
  • 2 cups uncooked long-grain white rice
  • 1 quart water
Instructions:
  • Combine onions, garlic, ginger, turmeric, dried chile pepper, and salt in a large bowl. Add flank steak and toss well to coat. Cover and refrigerate for at least 15 minutes.
  • In a Dutch oven over medium-high heat, heat oil and sauté onion and steak until steak is lightly browned. Add tomatoes and cook over high heat for about 10 minutes.
  • Add the onion soup mix to the Dutch oven, cover, and let it simmer on low heat for 1 hour until the meat is tender.
  • In a medium saucepan, bring rice and water to a boil. Cover, simmer over low heat for 20 minutes. Serve the steak mixture over the rice.
