Ginger cordial

Cool off with a refreshing ginger cordial on a hot summer day.
Ingredients:
  • 1 lime
  • 80g caster sugar
  • 7cm-piece fresh ginger, peeled, sliced crossways
  • Ice cubes, to serve
  • Lime wedges, to serve
  • Chilled tea or soda water, to serve
Instructions:
  • Peel the lime using a peeler and then squeeze out the juice.
  • Combine the sugar, ginger, lime rind, lime juice, and 1.5 liters of water in a saucepan. Stir gently over low heat until the sugar completely dissolves.
  • Bring the mixture to a boil, then lower the heat and let it simmer gently for 10 minutes. Remove from heat and allow it to cool down.
  • Pour the mixture into a large jug and refrigerate to chill. Remove the ginger, lime zest, and lime rind. When serving, pour some cordial into a glass with ice cubes and lime wedges. Top with chilled tea or soda water.
