Ingredients:
  • 6 eggs, separated
  • 1.25 gm bicarbonate of soda
  • 65.00 gm cornflour
  • 60.00 ml plain flour
  • 26.80 gm golden syrup
  • 1 tsp ginger
  • 2.50 gm cocoa
  • 2.50 gm cinnamon
  • 1 Flake Bar
  • 375mL thickened cream
  • 48.00 gm icing sugar
  • 5.00 gm cocoa
  • Dessicated coconut
  • Boiling water
Instructions:
  • Preheat the oven to 195C with the fan on.
  • In a mixer, whip egg whites until stiff peaks form. Add sugar and beat for 1 minute. Mix in egg yolks and golden syrup. Sift dry ingredients, then gently fold into the batter using the mixer.
  • Divide the mixture evenly between 2 round tins that have been greased or lined with parchment paper.
  • Bake in the oven for 25 to 30 minutes. Remove from oven and let sit for 5 minutes. Then, gently tip each cake onto a tray to cool.
  • Whip cream until firm peaks form, then delicately fold in crushed Flake Bar.
  • Spread the delicious filling over one cake, then gently layer the second cake on top.
  • Prepare the icing by combining icing sugar and cocoa in a bowl with a tablespoon of boiling water. Stir well and gradually add more boiling water until the icing reaches the desired consistency - not too runny. Adjust by adding more cocoa or icing sugar as necessary.
  • Spread the cake layer generously with the luscious topping, then shower the iced cake with a delightful flurry of coconut. Allow it to cool in the refrigerator before serving to fully enjoy its scrumptious flavors.
