Indulge in a budget-friendly and mouthwatering Christmas pork dish.
Ingredients:
  • 250.00 ml ginger wine
  • 42.00 gm soy sauce
  • 165.00 gm marmalade
  • 36.40 gm olive oil
  • 1.8kg pork neck
  • 1 granny smith apple, cut into matchsticks
  • 37.95 gm walnuts, toasted, chopped
  • 50g baby spinach
Instructions:
  • In a jug, mix together wine, soy sauce, mustard, and 1/3 cup of marmalade for a flavorful marinade.
  • In a large, heavy-based casserole dish, heat oil over high heat. Brown pork by cooking for 8-10 minutes, then pour in wine mixture and bring to a boil. Add stock, then simmer covered on low heat for 1 hour 30 minutes until tender. Uncover and cook for an additional 30 minutes, basting pork with wine mixture until cooked through. Transfer to a plate and keep warm by covering.
  • In a saucepan over medium heat, combine 1 cup pan juices and the remaining marmalade. Cook, stirring occasionally, for 15 minutes or until slightly thickened.
  • Place the apple slices, celery sticks, walnuts, and spinach beautifully on a platter, then crown with sliced pork. Generously drizzle the marmalade mixture over the top and serve.
