Ginger-packed buttermilk scones with a zesty lemon twist.
Ingredients:
  • 3 cups all purpose flour (400 g)
  • 3/4 cup sugar (160 g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup candied ginger (chopped into 1/4-inch pieces or smaller) (3 1/2 ounces or 110 g)
  • 1 tablespoon lemon zest
  • 1 tablespoon grated fresh ginger
  • 3/4 cup buttermilk* (200 ml)
  • 10 tablespoons (5 ounces, 140 g) unsalted butter, melted
  • 1 tablespoon coarse sugar for sprinkling on top (optional)
Instructions:
  • Preheat your oven to 400°F (or 200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, vigorously combine flour, sugar, baking soda, baking powder, and salt. Add candied ginger, lemon zest, and fresh ginger, stirring until evenly incorporated.
  • In the center of the flour, gently mix in the melted butter and buttermilk with a wooden spoon until just moistened. Mix until the mixture looks shaggy, being careful not to overmix.
  • Shape the dough: Split the mixture into two portions, then press each portion down on a floured surface to create a 1-inch thick, 6-inch wide circle. Cut each circle into 6 wedges. Place them on a baking sheet lined with parchment paper, ensuring they are at least an inch apart. Sprinkle with coarse sugar.
  • Bake at a high temperature for 18-20 minutes until golden brown. Let it cool on a rack for 5 minutes to enhance flavor before serving. For storage, ensure it cools to room temperature and then seal in a freezer bag. Enjoy your freshly baked treat!
