Ingredients:
  • 1 cup packed brown sugar
  • 0.75 cup white sugar
  • 0.5 cup butter
  • 0.5 cup shortening
  • 1 cup peanut butter
  • 2 large eggs
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 cup rolled oats
  • 1 cup chopped crystallized ginger
Instructions:
  • Preheat the oven to a perfect 350 degrees F (175 degrees C).
  • Combine brown sugar, white sugar, butter, and shortening in a medium bowl and cream together. Mix in peanut butter, eggs, and vanilla until well combined.
  • Mix together the flour, baking soda, salt, and ground ginger into the creamed mixture. Fold in the rolled oats and candied ginger to finish.
  • Spoon rounded portions onto a baking sheet.
  • Bake in the oven until golden brown, about 10-12 minutes. Transfer to wire racks to cool, then store in an airtight container once cooled.
