Gingerbread Blondies

Gingerbread blondies with a delicious glaze topping elevate this dessert to a whole new level.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/2 cup butter or margarine, melted
  • 3/4 cup packed dark brown sugar
  • 1/4 cup molasses
  • 3 teaspoons vanilla
  • 1 egg
  • 1/2 cup chopped pecans
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
Instructions:
  • Preheat oven to 350°F and generously spray an 8-inch square pan with cooking spray. In a small bowl, combine flour, baking powder, cinnamon, ginger, salt, and allspice; set aside.
  • Combine butter, brown sugar, molasses, vanilla, and egg in a medium bowl. Mix on low speed with an electric mixer until blended. Gradually add the flour mixture and then stir in the pecans. Spread the batter in the pan.
  • Bake for 24-26 minutes until a toothpick inserted halfway between the edge and center comes out with a few moist crumbs attached. Cool in the pan on a rack for about 1 hour. In a small bowl, combine powdered sugar and lemon juice to make a smooth glaze. Drizzle the glaze over the bars and cut them into 3x3 squares, then cut each square in half diagonally to make triangles. Store loosely covered.
