Gourmet gingerbread loaf - a delightful surprise for guests or on-the-go snacking.
Ingredients:
  • Melted butter, for greasing
  • 160ml (2/3 cup) treacle
  • 125g butter, cubed
  • 125g (3/4 cup, lightly packed) brown sugar
  • 1.25 gm bicarbonate of soda
  • 225g (1 1/2 cups) plain flour
  • 10.00 gm ground ginger
  • 1.25 gm mixed spice
  • 1/2 tsp ground cloves
  • Soft butter (optional), to serve
Instructions:
  • Preheat the oven to 160°C. Grease a deep, 10.5 x 18.5cm loaf pan with melted butter and line with non-stick baking paper.
  • In a large saucepan, combine treacle, butter, and sugar. Sift bicarbonate of soda over the mixture using a fine sieve. Cook over medium-low heat, whisking until smooth. Avoid boiling. Let sit for 5 minutes to cool slightly.
  • Sift half of the flour, ginger, mixed spice, and cloves through a fine sieve into the pan. Stir with a whisk until smooth. Repeat with the remaining flour and spices. Add the eggs and stir until well combined.
  • Pour the mixture into the pan and tap gently on a surface to release any air bubbles. Bake in the preheated oven for 1 hour or until a skewer comes out clean when inserted in the center. Let it sit for 2 minutes and then flip onto a wire rack. Serve warm after cooling for 30 minutes or at room temperature once completely cooled. Slice and enjoy with butter, if desired.
