Adorable gingerbread people are perfect for festive gifts and decor!
Ingredients:
  • 1 egg yolk
  • 125g butter, softened
  • 100g brown sugar
  • 125ml golden syrup
  • 375g plain flour
  • 10.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground cloves
  • Smarties or M&M's, to decorate
  • 1 eggwhite, lightly whisked
  • 320g icing sugar
Instructions:
  • - Preheat your oven to a toasty 180°C and line 2 baking sheets with parchment paper. - In a medium bowl, use an electric mixer to whip together the butter, sugar, and golden syrup until light and fluffy. - Mix in the egg yolk until just incorporated. - Add the flour, ginger, cinnamon, and cloves and stir gently with a wooden spoon until the dough is nearly mixed. - Finish combining everything by kneading the dough with your hands until it's smooth and ready to roll out.
  • Divide the dough in half and roll out one portion on a lightly floured surface to a 5mm-thick disc. Use a 10cm gingerbread man pastry cutter to cut out shapes and arrange them on the lined tray. Bake in the oven for 10-12 minutes or until lightly golden. Repeat the process with the remaining dough, rolling and re-rolling any gingerbread dough scraps.
  • For the royal icing, start by putting the egg white in a small bowl. Slowly mix in the icing sugar until you get a smooth paste. Fill a piping bag with a No. 4 plain nozzle with the icing. Decorate your gingerbread figures with the icing and Smarties if you like. Let it sit for 30 minutes to set. Keep in an airtight container for up to 2 weeks.
