Spooky gingerbread skeleton cookies for Halloween.
Ingredients:
  • 150g butter, chopped
  • 110g brown sugar
  • 125ml golden syrup
  • 1 Free Range Egg
  • 450g plain flour
  • 10.00 gm ground ginger
  • 3.75 gm mixed spice
  • 330g pkt royal icing
  • Red and yellow liquid food colouring
  • Dark chocolate writing icing, to decorate
Instructions:
  • Preheat your oven to 180C and prepare 2 baking trays by lining them with baking paper.
  • In a saucepan over medium heat, melt butter with sugar and golden syrup. Stir constantly for 3-5 mins until butter melts and sugar dissolves. Let it cool for 15 mins.
  • Transfer the fragrant butter mixture to a bowl. Mix in the egg until well combined. Fold in the flour, ginger, and mixed spice. Knead the dough on a lightly floured surface until it's smooth. Cover with plastic wrap and let it rest in the fridge for 30 minutes.
  • Divide the dough into quarters. Roll each portion into a 3mm-thick disc on a lightly floured surface and cut out shapes using a 10cm gingerbread man cutter. Place on prepared trays and bake for 12-15 mins, swapping trays halfway through, until light golden. Cool on trays.
  • Follow packet instructions to prepare the icing. Set half aside. Mix red and yellow food coloring to tint the remaining icing orange. Spread over half of the biscuits evenly. Let it set for 30 mins. Transfer reserved icing to a piping bag with a 2mm nozzle. Pipe skeleton shapes onto both plain and orange biscuits. Allow them to set. Finish by decorating the faces with writing icing.
