Indulge in a decadent Thin Mint cheesecake - a mint chocolate lover's dream!
Ingredients:
  • 25 Thin Mints Girl Scout Cookies®, crushed
  • 3 tablespoons butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 10 Thin Mints Girl Scout Cookies®, crushed
  • 1 drop peppermint extract, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and securely wrap the bottom of a springform pan with aluminum foil.
  • Combine 25 crushed cookies with butter in a large bowl until well blended. Firmly press the mixture into the bottom of a springform pan to create a delicious crust.
  • Using an electric mixer, blend cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing thoroughly. Gently fold in 10 crushed cookies and peppermint extract.
  • Smoothly spread the luscious cream cheese mixture over the buttery crust. Place the springform pan in a deep baking dish and fill the dish with water halfway up the sides of the pan.
  • Bake in the preheated oven for 45-60 minutes until the center of the cheesecake is set. Allow the cheesecake to cool in the slightly open oven for about 1 hour, then refrigerate until firm for about 4 hours.
