Savor our delicious meat-free Welsh "sausage" made with leeks, thyme, breadcrumbs, and cheese.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 medium leeks, light green parts only, minced
  • 4 sprigs fresh thyme, leaves only
  • 2 cloves garlic, minced
  • 0.33333334326744 cup dry bread crumbs, divided
  • 0.33333334326744 cup all-purpose flour, divided
  • 0.25 cup shredded sharp Cheddar cheese
  • 0.25 cup shredded Havarti cheese
  • 0.33333334326744 cup milk
  • 2 large eggs, divided
  • 0.5 teaspoon mustard powder
  • 1 teaspoon milk
  • 0.25 cup vegetable oil for frying
Instructions:
  • Heat 1 tablespoon of oil in a deep pan over medium heat. Saute leeks until tender and fragrant, about 5 minutes. Stir in thyme and garlic; cook for an additional 30 seconds. Transfer the mixture to a mixing bowl and chill in the refrigerator until it reaches room temperature, about 20 to 30 minutes.
  • Take out of the fridge and incorporate 1/2 of the bread crumbs, 1/2 of the flour, Cheddar cheese, Havarti cheese, 1/3 cup milk, 1 egg, and mustard powder. Stir until a dough comes together. Chill in the fridge until firm, approximately 30 minutes.
  • In a bowl, combine the last egg with 1 teaspoon of milk and whisk together. In a separate bowl, put the remaining flour. Lastly, place the remaining bread crumbs in a third bowl.
  • Take a handful of the leek mixture and shape it into a sausage. Roll it in flour, dip in egg wash, and coat in bread crumbs. Repeat process for the rest of the "sausage" links.
  • Heat a generous amount of oil in the pan over medium-high heat until it reaches 350 degrees F (175 degrees C).
  • Fry the links in hot oil until crispy and golden brown on each side, about 2 minutes per side. If needed, work in batches. Place on a paper towel-lined sheet to drain excess grease.
