Delicious lemon loaf with cardamom and sweet honey glaze for a perfect pick-me-up.
Ingredients:
  • For the bread:
  • 4 ounces (1 stick, or 8 tablespoons) butter, softened *
  • 1 cup minus 1 tablespoon granulated sugar
  • 1 tablespoon honey
  • 2 eggs (room temperature)
  • 1 tablespoon lemon zest
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon baking powder
  • For the glaze:
  • 1/4 cup lemon juice
  • 1/3 cup sugar
Instructions:
  • Preheat the oven to 350°F and generously butter a 4x8-inch loaf pan.
  • Cream the butter with sugar, honey, eggs, and milk: In a mixing bowl, beat the butter until fluffy for about 2 minutes. Incorporate the sugar and honey, beating until creamy, for a few more minutes. Add eggs one at a time, beating well after each addition. Gradually mix in the milk on low speed. Don't panic if the mixture appears curdled. Stir in lemon zest.
  • Combine the remaining dry ingredients with the wet mixture: Sift together flour, salt, cardamom, and baking powder. Beat until smooth.
  • Baking: Pour batter into the pan and bake at 350°F for 1 hour.
  • Prepare the glaze by heating lemon juice, sugar, and honey in a small saucepan until the sugar completely dissolves while the lemon bread is baking.
  • Enhance bread: After taking it out of the oven, use a thin skewer to poke holes on the top to allow the glaze to seep in. Drizzle the glaze over the hot bread in the pan. Allow it to cool for 10 minutes before slicing and serving.
