Gluten Free Brown Butter Apple Hand Pies

Elevate gluten-free apple hand pies with decadent brown butter filling, topped with creamy vanilla ice cream.
Ingredients:
  • 2.5 cups gluten-free all-purpose baking flour
  • 2 tablespoons white sugar
  • 2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 0.75 cup butter
  • 2 eggs
  • 0.25 cup cold water, or more as needed
  • 4 apples, peeled and thinly sliced
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 2 tablespoons gluten-free all-purpose baking flour
  • 4 teaspoons lemon juice
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 6 tablespoons butter
  • 1 tablespoon water
  • 1 teaspoon white sugar, or as needed
Instructions:
  • In a food processor, combine 2 1/2 cups flour, 2 tablespoons sugar, xanthan gum, and salt. Add 3/4 cup butter, 2 eggs, and cold water. Blend until mixture is evenly mixed and crumbly yet holds together when pinched. If necessary, add more cold water, 1 tablespoon at a time. Shape dough into a ball, transfer to a bowl, and refrigerate for 30 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C).
  • Combine apples with a blend of white sugar, brown sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg in a spacious bowl.
  • Brown 6 tablespoons of butter in a saucepan over medium heat until it turns a nutty brown color and gives off a delicious aroma, about 3 to 5 minutes. Pour the browned butter over the apple mixture and make sure everything is nicely coated.
  • Roll out the dough on a lightly floured surface until it's 1/8-inch thick. Cut the dough into 4-inch circles. In a bowl, whisk together 1 egg and 1 tablespoon water, then brush this egg wash over each dough circle. Spoon about 2 tablespoons of apple filling onto one half of each circle, then fold the other half over the filling. Use a fork to crimp the edges of each pie. Place the pies on a baking sheet, brush the tops with the remaining egg wash, and sprinkle 1 teaspoon of white sugar over the pies.
  • Bake until the pies are lightly browned, for about 30 minutes in the preheated oven.
