Secret ingredient: Almond flour makes these chocolate chip cookies crisp and tender. Enjoy warm for chewy cookies or cool for crispness. Keep extras in a cookie jar at room temp.
Ingredients:
  • 0.25 cup brown sugar, light or dark
  • 0.25 teaspoon salt
  • 2 tablespoons butter, at room temperature
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 cups King Arthur Almond Flour
  • 0.5 cup chocolate chips
Instructions:
  • Preheat the oven to 350°F and prepare a baking sheet by greasing it lightly or lining it with parchment paper.
  • Mix the brown sugar, baking soda, salt, and butter together until smooth.
  • Combine the vanilla, egg, and almond flour, stirring until well mixed. Remember to scrape the bottom and sides of the bowl, then mix at medium speed for 1 minute.
  • Incorporate the chocolate chips.
  • Drop rounded tablespoonfuls of dough onto the baking sheet using a tablespoon cookie scoop for consistent sizing.
  • Carefully press down on each cookie to achieve a thickness of about 3/8-inch.
  • Bake the cookies until they are beautifully golden brown, for about 9 to 12 minutes.
  • Take the cookies out of the oven and let them cool on the pan for 2 minutes before transferring them to a rack to cool completely.
